4 chicken breasts in all.
1 cup white rice or basmati;
1 medium onion, thinly sliced
2 minced garlic cloves
1 cup chicken broth plus fresh or heavy cream.
1 cup shredded cheeses—cheddar, mozzarella, or a mix
2 teaspoons olive oil for cooking
Taste the pepper and salt;
use one teaspoon paprika.
1/2 teaspoon dried thyme
For a kick, optional is : One half a teaspoon cayenne pepper
Fresh parsley as optional garnish.
